Beef Stroganoff

141. Beef Stroganoff (Fast Food)

Prior to tonight, the only stroganoff I'd ever made had come straight out of a Continental packet. Don't fret though, I do know what I'm doing when it comes to cooking. The last time I cooked anything with words like "instant" or "Gravox" printed on the packet, I was about 13. But anyway, having made a proper version of stroganoff, and seeing how easy it is, I have no idea why packet stroganoffs mixes are so prevalent.

This recipe actually is fast to cook (unlike some of the other Fast Food recipes which ended up taking quite a bit of time). Simply cook onions in butter, then add mushrooms. Once they're cooked, sprinkle over some nutmeg and pepper, and then remove from the pan and set aside. Then add strips of beef (expensive Scotch fillet, natch) and stir-fry before re-adding the onions and mushrooms, then some paprika, Dijon mustard and crème fraiche (leftover from the pea orzotto and too expensive to die slowly in the fridge). Serve with rice. It's just too easy for something this fabulous.

There's something oddly satisfying about plonking down an enormous plate full of solidly brown stew and rice on the table. As if I were an Eastern-European mama with pigtails called Olga who wears sensible shoes and high-waisted skirts.

It's sooo good. It feeds four (generously), so my parents and I dilligently saved a massive plate of the stuff for my brother who's still at work. But we could have easily kept on eating, ignoring our bursting bellies in the name of deliciousness.
